01 — Who

This is Vincenzo's shop.
Not a franchise.

There is no head office, and no supply contract telling him which tomatoes to buy. He built the benches out front himself. He picks up the phone himself. When a leg of prosciutto needs slicing, he does that himself too.

That is the entire idea: one person who cares more than any system would ever require him to. You can taste the difference, and it is the only marketing he has ever needed.

Germany has a purity law for its beer. Feta only gets to be feta if it comes from the right place. Pizza deserves the same kind of respect.

03 — The sourcing

He drives to Italy
for this.

Everything that goes on the pizza comes from Italy, with two exceptions he will happily admit to. The stracciatella and the mascarpone are Dutch, because fresh beats imported.
